For years, I've been a reverse steak snob, eschewing tenderloin for cheaper cuts like sirloin and flat-iron steak. After all, I figured, anybody can make a tenderloin taste good. It takes skill to get a sirloin off the heat at the point of maximum tenderness, and to season and serve it just right.
